What the engagement looks like
We start with the money. What can you invest, what return do you need, and what does the catchment actually support? A 60-cover casual dining room in a market that wants βΉ300 tickets is a different business from the same room selling βΉ900 tickets, and the difference shows up in the kitchen plan, the staffing and the menu.
Then we work outward: concept and positioning, location assessment, kitchen and equipment, menu and costing, licences, vendors, hiring, training, soft launch.
You get a critical path with dates and owners. Every week of delay past your planned opening costs rent, salary and interest with zero revenue against it, so the schedule is treated as a deliverable, not a hope.
What we will tell you honestly
If the numbers do not work, we say so while it is still cheap to walk away. We have told founders not to sign leases. It is a bad way to win a project and a good way to earn a reference.

Restaurant Startup Consulting: questions people ask
- At what stage should I bring you in?
- Before you sign the lease. Location, kitchen size and shaft position decide half your operating cost, and none of them can be fixed later without rebuilding.
- Do you help raise money?
- No. We build the financial model and the operating plan investors ask for, and we will sit in the meeting if it helps, but we do not raise funds or take equity for introductions.
- Can you work with my architect and contractor?
- Yes, and it works better when we do. We specify the kitchen β flows, services, equipment β and the architect designs around it, rather than us being handed a kitchen shaped like a leftover corner.
